You can have both. At least for Kaito, his training gives insight into who he is as a person, gives us plenty of interactions with his character and still involves a struggle for the protag to overcome.
Unless by NPC interaction you meant the options where we chose to hang out with people other than Eldra? I'm assuming not, since that means you'd be implying people choose Eldra because it's the route that involves seeing your mentor the least.
You think that Zhang's and Kaito's training were similar? You're over exaggerating.
... I literally said that I'd be fine with the free time sections with Eldra if the MC actually came away from them learning something or developing as a character.
I want to reiterate - if Eldra's training had just been us chilling out while she ruminated and taught us about the "harmony" of this world or if her "training" was more about the MC understanding what "harmony" was.
Or if the MC gained a newfound appreciation for their family after being spending more time with them due to suddenly getting more free time.
Or even if the MC just recognized that their workaholic mentality is actually kinda toxic after being forced to chill out and rest by Eldra.
Then I would have been cool with that. That's still more than what we got. That's why it's skippable - not because it's not "real training".

I think this will only happen if you're dishonorable, on my honorable run, she appraises you during the scene where you hold her hand, and says her father might even approve. So do well in the trials and be an honorable guy, you probably won't have to be fighting them, especially given how highly they value honor. Of course, they're still noble, and you're still an ex labourer, so I might be wrong.

I think you'd probably still have to duel someone even on a honorable run, considering the Bladed Lands are all about Honor. Some show of force is necessary so that Keiko and her father can demonstrate to the other nobles that you aren't just a laborer and preserve Keiko's honor that way.
Having High Honor I feel like would make it so that the duel is more of a formality and her father isn't going to make things too difficult for you/is rooting for you. Whereas Low Honor, I imagine he's genuinely hoping you'll die.
Rematch with jack, absolute troll revenge on goro for that cheapshot entry in nanhou and although not really a fight i want a sparring match with mao, its time for him to teach his star disciple that juicy thunderfall tech.
