The single mom route in Press Play, the poor background from Hungry Dogs, TWH, Cantata, The Ballad of the Young Gods (or is she?), I don't remember if the mother from apartment 502 is a good role model or not. I'd list more but I just realized a lot of these women either die or are already dead...
I think Costa Sul has a mother who is good but I haven't played much yet.

Adoriel’s Tears and Kindling both have mothers raising you alone.
Wayfarer — Varyn is more of a teacher/master figure, but I personally see Sero as a parental figure since they’ve watched the MC grow up.
The Brightest Stars — you have both parents, and you can choose which one you’re closest to.
The Split, in a way — your mother is someone you never got to see while your twin does, and you can grow jealous or want to seek her out because the parent you do get to see is your criminal father, who is very much not your biggest fan.
God Syndicate mentions your mother in flashbacks as someone who protected you from your abusive father, and you can shape your relationship with her.
The Sword of Rhivenia has the simp mother.
Honor Amongst Thieves lets you have two mothers depending on your childhood path, and Bladeweaver has the adoptive master/disciple duo you call uncle and aunt.

There are probably more, but these are the ones I remember. Though now that I think about it, there aren’t that many IFs with a single father figure either, they either go out for milk, hate your guts, or, if they’re actually decent, end up dying (like in Vendetta and Sanguine Sky).
